Vineyard selection

This wine is sourced from a selection of Limestone Coast vineyards planted on free‑draining sandy loams over limestone, sites that consistently deliver bright, red‑fruited Pinot Noir. The vines are predominantly spur‑pruned by machine with careful hand follow‑up, and shoot and crop thinning are used to manage vigour and achieve moderate yields. These practices ensure small, evenly ripened bunches with good colour, aromatic lift and fine tannin.

Winemaking process

The fruit was harvested in the cool of the morning and destemmed to open fermenters, where it was held cold for two days to encourage gentle extraction of red fruit characters. Fermentation was then allowed to warm through the mid‑20s, with light pump‑overs to build colour, flavour and silky tannins. At dryness the wine was drained from skins overnight, with only a soft press fraction included, in order to maximise pure fruit expression while keeping the tannins supple and subtle; the wine then matured in a mix of older oak and tank to retain freshness.
