Vineyard selection
Fruit was grown at a high-altitude site of around 500m with a south-facing aspect, providing a long, cool season ideal for slow flavour development and balanced acidity.
Winemaking process
The fruit was cool-harvested before being destemmed into small fermenters at the winery. Fermentation was carried out at cool temperatures with gentle pump-overs to preserve freshness, fragrance, and supple tannins, before nine months’ maturation in French oak.
