Vineyard selection
This wine is drawn from Limestone Coast vineyards on free‑draining sandy loam and limestone soils, ideal for producing aromatic yet finely structured whites. The vines are machine‑pruned with hand follow‑up and managed to moderate yields to encourage flavour concentration and good acid balance. Careful canopy management ensures dappled light on the fruit zone, protecting bunches from sunburn while allowing flavours of citrus and pear to develop fully.
Winemaking Process
The grapes were harvested in the cool of the night to preserve delicate aromatics, then quickly pressed off skins to minimise colour and phenolic pickup. The juice was cold settled before a cool fermentation in stainless steel, with yeast chosen to highlight citrus, pear and mineral notes. Following fermentation, the wine rested on fine lees with gentle stirring to build mid‑palate texture while retaining a crisp, dry, fruit‑driven style.
