Winemaking
Fruit from our single estate vineyard was harvested in the cool of the early morning to retain freshness and aromatic purity. Following gentle pressing, the juice was cool fermented to preserve varietal expression and natural texture. Extended lees contact added subtle complexity and mouthfeel, while careful blending enhanced the wine's generosity, precision and distinctive maritime character.
