COONAWARRA, SOUTH AUSTRALIA
The 2022 vintage in Coonawarra benefited from above-average winter rainfall, which replenished soil moisture and set the vines up well for the growing season. Mild spring and early summer conditions encouraged even canopy development and balanced crop levels, while the absence of prolonged heat waves allowed the fruit to ripen gradually.
Dry conditions leading into harvest, combined with cool nights and mild daytime temperatures, preserved natural acidity and promoted excellent flavour development. The extended ripening period enabled fruit to reach optimum maturity, resulting in Cabernet Sauvignon with intense varietal character, refined tannins and excellent balance.
Winemaking
Following inoculation, the ferment was allowed to warm naturally before temperature control was used to maximise colour, flavour and tannin extraction. After fermentation, the wine remained on skins until the tannins softened and integrated, before maturation in French oak to enhance complexity and structure. Colour

PALATE
Rich and generous, showcasing concentrated dark berry fruits layered with fine, supple tannins and hints of vanilla, mocha and cedar from French oak maturation. A balanced wine with excellent depth, structure and a long, persistent finish.
Aroma
Lifted aromas of ripe blackcurrant, blackberry and dark plum are complemented by notes of dark chocolate, subtle spice and well-integrated French oak.
Food match
An ideal partner for slow-cooked lamb shanks in rosemary-infused gravy, grilled rib-eye steak or aged cheddar.
