Vineyard selection
The fruit is from a single vineyard where the vines were detail pruned to ensure balanced growth and low yields.
Winemaking process
The fruit was harvested in the cool of the morning before being gently pressed at the winery. The resultant juice was transferred to barrels for fermentation. The wine spent approximately 12 months in French oak barrels and particularly completed malolactic fermentation for complexity.
