2022 Sauvignon Blanc
A succulent wine with great fruit intensity and vibrancy on the finish, and aromas of freshly cut green apple, fig and lemon peel with a citrus backbone.
Vineyard selection
Premium cool climate vineyards from Mt Benson, Padthaway and Limestone Coast are paired with warmer inland vineyards for this blend. The grapes are monitored closely during the harvesting period to ensure they are harvested at optimum flavour ripeness with the natural acid retained.
Winemaking process
Fruit was harvested in the night to ensure it was as cool as possible when picked before being crushed and destemmed and pressed to a settling tank. The juice was clarified and inoculated with selected yeast to express fruit characters. A slow, cool ferment at 14-16 degrees preserved the natural aromatics.
